Today I made some beautiful and moreish banana bread.
It is so simple, healthy and delicious and all the family will love it.
And this is how you do it..
You will need:
200g self-raising flour
75g White sugar
1tsp bicarbonate of soda
2 ripe bananas (the riper the better even if they are brown they can still be used)
First preheat your oven to 180 degrees and oil up the baking tin.
Then sieve your flour into a bowl.
In another bowl cream the butter and sugar together.
Next mix the egg into the butter and sugar mixture.
Then gently fold in the flour, don’t mix too much.
Next add your bananas and raisins and fold some more, until the mixture is even.
Then add the mixture to the baking tin.
It is supposed to take an hour to cook but check after 30 minutes as it always seems to be quicker. If you notice it is slighty squidgy in middle it is probably the banana not raw batter.
Then tada it’s done. Enjoy. I sure did 🙂
Mine was soft and bouncy in the middle and slightly crunchy on the out. The raisins were juicy and as you bite into the bread you get a slight pop in your mouth from the raisins. The banana gives the bread a slight sweetness, and because there it isn’t too much sugar in the bread it isn’t too sweet or sickly so you eat loads 😀
